Ingredients

Quantity Ingredient
1 quantity Yoghurt with a twist, without cumin
80g cucumber, grated
20 small basil leaves
or 10 large basil leaves, finely chopped
2 tablespoons lemon juice, or more as desired
160g cooked prawns, weight with heads and shells removed
100g black seedless grapes
100g canned or cooked chickpeas, rinsed and drained
100g yellow pepper, diced
10 romaine lettuce leaves, finely sliced
salt
pepper

Method

  1. Mix the dressing, cucumber, basil and half the lemon juice. Place all the other ingredients in a salad bowl. Pour over enough dressing to coat the ingredients and toss gently. Add lemon juice, salt and pepper to taste. Serve immediately.
