Ingredients

Quantity Ingredient
2 tablespoons lemon juice
60ml hazelnut oil
1/2 teaspoon salt, plus extra to season
2 fresh pears
3 sticks celery, thinly sliced
120g walnut kernels
180g roquefort, crumbled
pepper

Method

  1. Whisk the lemon juice, hazelnut oil and salt together in a large salad bowl. Core the pears and cut into thin strips. Add them to the salad bowl, along with the celery and walnuts. Toss gently. Incorporate the cheese, season with pepper, then add salt if necessary. Share out onto separate plates and serve immediately.
