Ingredients

Quantity Ingredient
1 quantity Simple vinaigrette, made with sherry vinegar
1 large lemon, peeled and cut into segments, membranes removed
1 large orange, peeled and cut into segments, membranes removed
1 generous handful mint leaves, coarsely chopped
1 generous handful flat-leaf parsley, coarsely chopped
1 small bunch dill, coarsely snipped
1 small bunch tarragon, coarsely snipped
3 tablespoons seeds such as sunflower, pumpkin, or a mixture

Method

  1. Pour the vinaigrette into a salad bowl and add the other ingredients, except for the seeds. Toss gently to coat with dressing. Add the seeds and serve immediately.
