Ingredients

Quantity Ingredient
200g cooked chicken, thinly sliced
150g cucumber, cut into julienne strips
65g crisp salad leaves
40g beansprouts
2 hard-boiled eggs, halved
1/2 red pepper, cut into thin strips
3 spring onions, sliced lengthways
1 quantity Spicy peanut dressing
2 tablespoons toasted peanuts, roughly chopped
1 red chilli, finely chopped

Method

  1. Arrange all the ingredients, except for the peanut dressing, peanuts and chilli, in a dish. Pour a few spoonfuls of dressing over and sprinkle with the peanuts and chilli. Serve with the remaining dressing on the side.
