Ingredients

2 tablespoons olive oil
1/2 onion, chopped
1/2 red pepper, chopped
1/2 red apple, chopped with skin on
a generous pinch fine sea salt
1 garlic clove, chopped
2 tablespoons tomato puree
2 ripe tomatoes, chopped, about 250g
60ml passata
2 tablespoons red wine vinegar
A pinch cayenne pepper
1/2 teaspoon ground cinnamon
2 cloves
1/4 teaspoon celery salt
1 bay leaf

Method

  1. Heat the oil in a large pan and gently cook the onion, pepper and apple for 15 minutes, stirring often. Season with salt, add the garlic and cook for 5 minutes more. Stir in the tomato purée, then add the remaining ingredients and gently cook, covered, for 15 minutes. Stir now and then. Uncover and cook for 5 minutes more. Discard the bay leaf and blitz the sauce in a food processor until smooth. Add more salt and pepper or vinegar to taste, then push through a sieve. Store in an airtight container in the fridge.
