Ingredients

Quantity Ingredient
80g carrots, peeled
50g parsnips, peeled
180g mango flesh, chopped

Method

  1. If using a powerful blender or food processor, roughly chop the carrots and parsnips, otherwise grate the vegetables. Place in the bowl of the blender or food processor, add the mango and blitz until smooth. With the motor running, gradually add enough water to achieve the desired consistency. Serve immediately.
