Roast buttered almonds with honey and chilli

These are super tasty, take virtually no effort at all and make a lovely snack. An added bonus is that your kitchen will be filled with the wonderful smell of toasted nuts and butter.

Ingredients

Quantity Ingredient
3 tablespoons unsalted butter
3 tablespoons runny honey
1 teaspoon chilli flakes
200g blanched almonds
sea salt flakes

Method

  1. Preheat the oven to 170°C. Place the butter in a 30 x 20 x 5-cm roasting tray and transfer to the oven for 2 minutes to melt.
  2. Remove the tray from the oven and stir the honey and chilli flakes into the melted butter. Add the almonds and toss to coat, ensuring they are spread out in a single layer.
  3. Roast for 20–25 minutes, or until the nuts are golden – keep an eye on them, as they burn easily, and shake the tray occasionally. Sprinkle with salt. Delicious served warm – the nuts will crisp up as they cool a little.
