This ubiquitous salad, known as ‘salata baladi’, ‘country salad’, is found in every home, Egyptian restaurant and street cart in Cairo and throughout Egypt. The salad dressing may vary slightly from place to place, but the essential ingredients remain the same.

Ingredients

Quantity Ingredient
6 tomatoes
6 small cucumbers
1 onion 
1 hot fresh chilli, chopped, (optional)
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 tablespoon fresh coriander, chopped

For the salad dressing

Quantity Ingredient
4 tablespoons olive oil
2 tablespoons lemon juice
1/2 teaspoon ground allspice
salt

Method

  1. Cut the tomatoes in half and remove the seeds with a small sharp knife or a teaspoon. Dice the tomatoes, cucumbers and onion. Place in a bowl with the chilli, if using, the chopped parsley, dill and coriander.
  2. Whisk together the salad dressing ingredients and toss the salad with the dressing to combine.
