Ingredients

Quantity Ingredient
110g dried chickpeas
105g dried red kidney beans
750g lamb neck or shoulder, with the bone, chopped into chunky pieces
165g pearl barley, rinsed
45g brown lentils, rinsed
salt and freshly ground black pepper, to season
1 small handful flat-leaf parsley, chopped 
1-2 tablespoons coriander leaves, chopped
60g garlic chives or spring onion leaves, chopped
30g watercress, chopped
20g ghee
1 large onion, halved, then sliced
1 teaspoon ground turmeric
1 teaspoon dried mint

Method

  1. Wash the chickpeas and kidney beans and place in a bowl. Cover with 750 ml water and soak overnight.
  2. Rinse lamb in water and place it in a large saucepan. Add 2 litres water, the chickpeas, beans and their soaking water. Bring slowly to a simmer, skimming when necessary. Cover and simmer gently for 1 hour.
  3. Add the barley and lentils and season with salt and pepper. Cover and simmer for a further 1½ hours, or until the meat is tender and the beans are soft.
  4. Remove the meat from the pan and strip the flesh from the bones. Cut into small pieces and return to the pan with the herbs and greens. Cover and leave over low heat for 15 minutes.
  5. Meanwhile, heat the ghee in a frying pan and gently fry the onion until golden. Sprinkle with the turmeric and fry until the onion is crisp, ensuring it doesn’t burn. Rub the mint to a powder, stir it through the onion and remove from the heat.
  6. Stir half the onion mixture into the soup. Serve with flat bread as a main meal, garnished with the remaining onion.
