za'atar mix

Method

  1. Make the khoubiz dough as directed in the recipe, but do not rest it for 20 minutes after shaping the rounds.
  2. Flute the edge of each round with your fingertips and generously brush each round with olive oil. Sprinkle 2 tablespoons za’tar spice mix evenly over the 8 rounds and bake as for khoubiz. Do not turn it over; brown the top under a hot grill if desired.
