Ingredients

Quantity Ingredient
1 snapper
4 spring onions, cut into 3 cm pieces
2 cm piece ginger, cut into thin matchsticks
2 large garlic cloves, chopped
1 lemon, thinly sliced
1/2 tablespoon tamari
black pepper
fresh coriander sprigs
salad, to serve
salad, to serve

Method

  1. Preheat oven to 180ºC.
  2. Put a large piece of baking paper on top of an oven tray.
  3. Pat the fish dry.
  4. Place the fish on top of the paper and tuck the spring onions, ginger, garlic and lemon slices inside the cavity of the fish.
  5. Pour over the tamari. Add some black pepper and bake for 15 minutes until cooked through.
  6. Remove from the oven and let rest for 5 minutes. Garnish with coriander sprigs and serve immediately with rice and salad.
