Ingredients

Quantity Ingredient
150g self-raising flour
90g shredded coconut
100g rolled oats
75g sultanas
75g dates, chopped
60g sunflower seeds, (optional)
125g butter
2 tablespoons water
80g honey
1 egg, lightly beaten

Method

  1. Preheat oven to 180°C.
  2. Grease and line a 20 x 30 cm lamington tin.
  3. Mix the flour, coconut, oats, dried fruit and seeds in a large bowl.
  4. Melt the butter, water and honey in a saucepan over a low heat and pour over combined dry ingredients while still hot. Stir well until mixture comes together. Add the egg and combine well.
  5. Spoon mixture into the lamington tin and bake in the preheated oven for 20 minutes, or until set and golden brown.
  6. Allow to cool before cutting into wedges.
