Ingredients

Quantity Ingredient
4 eggs, separated
1/2 cup self-raising flour
1 cup carrot, grated
1 cup zucchini, grated
3/4 cup pumpkin, grated
1/4 cup shallots, chopped
1/2 cup semi-sundried tomatoes, chopped
60g reduced-fat tasty cheese, grated
60g reduced-fat feta, crumbled

Method

  1. Preheat oven to 180°C.
  2. Whisk the egg whites to soft peaks. Sift the flour into a bowl and gently fold in the egg whites. Fold in the vegetables and egg yolks. Season with salt and pepper to taste. Pour the mixture into a greased and lined 1.5-litre dish and top with the cheeses.
  3. Bake for 40 minutes or until cooked through.
