Ingredients

Quantity Ingredient
4 freestone peaches
1/2 cup rolled oats
1/2 cup mixed nuts
2 tablespoons pumpkin seeds
1 teaspoon sesame seeds
2 tablespoons treacle, warmed
1 tablespoon extra-virgin olive oil
pinch ground cinnamon

Method

  1. Preheat oven to 180°C.
  2. Run a knife around the centre of each peach and gently twist to separate the halves. Remove and discard the stone, and set aside.
  3. Gently toast the oats, nuts and seeds in a dry frypan for 3–4 minutes (watch carefully to avoid burning). Remove the mixture from the pan and stir through the treacle, oil and cinnamon.
  4. Fill the peach halves with the oat and nut mixture. Bake for 10–12 minutes, until warmed through and the topping is crunchy.
