Sounds quirky, but it works. Go easy with the vanilla… we’re looking for a just a hint poking through the earthy mushrooms.

Ingredients

Quantity Ingredient
1 quantity Mushroom duxelles
drop vanilla extract
4 teaspoons creme fraiche, (optional)

For the quick veg stock (makes 1 litre)

Quantity Ingredient
1 carrot, grated
1 onion, grated
1 celery stick, grated
woody mushroom stalks
green top of a leek, finely chopped, (optional)
parsley or other herb stalks, (optional)
1 bay leaf
tarragon stalks, leaves saved for the soup

Method

  1. This is a fast, easy stock that you can use for any soup. Place all the ingredients in a tall pan with 1.1 litres water. (Add whatever vegetables you have, all ingredients are optional.) Cover, bring to the boil, then reduce the heat and simmer for 25 minutes.
  2. Add most of the mushrooms and tarragon leaves to the stock. There’s no need to remove the vegetables as they will bulk out the soup. Add the vanilla extract, remove the bay leaf and herb stalks and blend everything else until smooth. Taste and adjust the seasoning, adding plenty of pepper. Serve in warmed bowls with the remaining mushrooms and tarragon leaves, with 1 teaspoon crème fraîche on each, if using.

Storage

  • The soup will keep in sealed containers in the fridge for four days. Reheat the soup to just below boiling point to serve.

Cook natural

  • Making a quick and easy veg stock takes very little effort and is a good way to get the most out of your vegetables. Clean out your veg drawer and make a stock bursting with nutrition, or save veg peelings and tough herb stalks in the fridge or freezer until you have enough to make a stock such as the one above. There is no steadfast recipe needed, but I usually try to include carrot, onion, celery and leek as a base and add to those. Use whatever veg and peelings you have available.
