Raw broccoli with olive oil, honey and coriander

The more raw food we can eat the better. Raw broccoli is full of nutrients and enzymes and this salad is a quick and easy way to make a simple vegetable taste great.

Ingredients

Quantity Ingredient
300g broccoli
extra virgin olive oil
1/4 lemon, juiced
1 teaspoon raw local honey
1 teaspoon coriander seeds

Method

  1. Cut the broccoli into bite-sized florets. Peel the outer skin from the stalk and chop the soft core into cubes. Put in a bowl with the florets and season with extra virgin oil, the lemon juice and honey. Toast the coriander seeds in a dry pan until aromatic, then crush them slightly in a mortar and pestle and sprinkle over the top.

Storage

  • The raw broccoli is best eaten immediately.
