This traditional roast beef accompaniment tastes so much better if it is made with fresh horseradish. You can buy this from farmers’ markets and some supermarkets, or better still, grow your own and pick it to grate fresh from the garden.

Ingredients

Quantity Ingredient
250ml whipping cream
1 teaspoon red wine vinegar
1 tablespoon horseradish, freshly grated
1 teaspoon creme fraiche
sea salt

Method

  1. Whip the cream in a bowl until it holds firm peaks, then add the wine vinegar and whisk briefly to incorporate. Fold in the grated horseradish and crème fraîche and season with salt to taste.
