This morning savoury soup is the perfect breakfast for a hangover – or any morning when you’re feeling a little under the weather and need something soothing to start the day. Simmer the soup with some ginger strips or add ginger juice to really wake you up and warm you. The tofu isn’t essential, but it adds protein and calcium to the dish.

Ingredients

Quantity Ingredient
1/4 red onion, finely sliced
1/2 carrot, cut into fine matchsticks
100g firm tofu, cut into 2 cm cubes
1 tablespoon white miso
4 bok choy stems, chopped

Method

  1. Bring 4 cups water to the boil in a saucepan, add the onion and simmer for 2 minutes. Add the carrot and simmer for a further minute before adding the tofu.
  2. Mix the miso in a bowl with 3 tablespoons of the soup liquid until the miso dissolves. Pour this back into the soup, add the bok choy and simmer for 2 minutes. Take off the heat and allow to settle for a few minutes before serving.
