Hot corn cakes with apple and raisin sauce

This hotcake batter is thicker and denser than regular pancake batter. I’ve used corn as the filling, but feel free to add grated zucchini, carrot or shredded spinach – you can even add some spices or chilli if you like a little heat first thing in the morning.

Ingredients

1 cup boiling water
100g tamarind
5 jonathan apples, cored, roughly chopped
1 tablespoon raisins
pinch sea salt
1/2 teaspoon lemon zest
1 cup unbleached spelt flour
1 cup instant polenta
2 teaspoons baking powder
1 1/2 teaspoons sea salt
2 eggs
1/2 cup soy milk
1/4 red onion, finely diced
1 corn cob, kernels removed
olive oil, for frying
1 teaspoon freshly ground black pepper
1/4 teaspoon chopped chilli

Method

  1. To make the apple and raisin sauce, add the boiling water to the tamarind in a bowl and stir to dissolve before straining through a fine sieve. Combine the strained tamarind, apple, raisins and sea salt with enough water to cover the ingredients in a heavy-based saucepan. Bring to the boil over high heat, then reduce the heat, cover and simmer for 25 minutes, or until the apples have cooked down to a creamy consistency. Transfer to a food processor and purée into a smooth sauce then fold in the lemon zest and set aside.
  2. To prepare the hotcakes, combine the spelt flour, polenta, baking powder and sea salt in a large bowl and make a well in the centre. Beat the eggs and soy milk together in a separate bowl and pour into the centre, gradually working the flour into the egg, while adding 1 cup water. Whisk the batter until smooth, then stir in the onion and corn and refrigerate for 30 minutes.
  3. Heat 1 teaspoon oil in a frying pan over medium heat then add a few small ladles of batter. Cook each hotcake for 3–4 minutes, or until the top side sets and the underside is golden. Gently lift and flip to cook the other side for 2–3 minutes. Serve the hot corn cakes with the sauce.
