Tofu French toast with lemon walnut syrup

This is my simple version of the famed French toast. It’s fried, sticky and saucy – perfect for a pick-me-up brunch. Cook it gently in a non-stick pan and eat ‘à la minute’ with lots of lemony syrup.

Ingredients

Quantity Ingredient
250g medium to firm tofu
1 teaspoon ground cinnamon
1 teaspoon natural vanilla extract
1 teaspoon white miso
1 teaspoon rice syrup
pinch sea salt
1 tablespoon kuzu or arrowroot
1 teaspoon ground turmeric
4 slices sourdough bread
2 tablespoons macadamia or vegetable oil

Lemon walnut syrup

Quantity Ingredient
1/2 cup rice syrup
2 tablespoons lemon juice
1/4 cup chopped roasted walnuts

Method

  1. Put the tofu, cinnamon, vanilla, miso, rice syrup, sea salt, kuzu and turmeric in a food processor and process to a smooth purée, then transfer to a bowl. Dip a slice of bread into the tofu mixture to lightly coat both sides. Repeat with the remaining slices.
  2. Heat the oil in a large non-stick frying pan over medium heat. Add the coated bread to the pan and fry for 1–2 minutes on each side, or until golden brown.
  3. To make the lemon walnut syrup, bring the rice syrup to the boil in a small saucepan, add the lemon juice and simmer for 1 minute then add the walnuts, stir through and quickly pour over the French toast.
