Steamed mango, lime and coconut silk

This creamy citrus dessert uses silken tofu and is bursting with the tantalising tang of fresh mango. It is great served warm or chilled – a light and fresh, rapturous treat.

Ingredients

Quantity Ingredient
600g silken tofu
3 tablespoons coconut cream
3 tablespoons palm sugar, grated
1/3 cup lime juice
2 limes, finely zested
1 teaspoon kuzu or arrowroot
3 drops lemon oil
250g mango, diced
sea salt
1/4 cup shredded coconut

Method

  1. Put the silken tofu in a fine sieve and leave to drain for 30 minutes.
  2. Preheat the oven to 175°C. Put the tofu in a food processor with the coconut cream, palm sugar, lime juice and zest, kuzu, lemon oil, mango and a pinch of sea salt and process until smooth and silky. Spoon into six 125 ml ramekins, cover with foil and place in a roasting tin. Fill the tin with enough warm water to come halfway up the sides of the cups to create a steam bath. Place in the oven and cook for 30 minutes, or until slightly firm to the touch.
  3. Top with shredded coconut and serve warm on a winter’s night, or chilled in summer with a glass of sweet wine.
