Green beans rolling in toasted sesame seeds

This side dish can also be served cold as a salad. The dressing also works perfectly with blanched broccoli, asparagus or any tasty cooked greens. Try adding some torn mint and lime or lemon zest for a springtime feel.

Ingredients

50g sesame seeds
2 tablespoons white miso
1 tablespoon brown rice syrup
1 tablespoon brown rice vinegar
500g green beans, trimmed

Method

  1. Dry-fry the sesame seeds in a frying pan over low heat for 5–7 minutes, or until toasted and fragrant – they will begin to pop when ready. Transfer the sesame seeds to a mortar with a pestle or a spice grinder and pound or grind them until roughly crushed.
  2. Combine the miso, rice syrup, vinegar and 2–3 tablespoons water in a saucepan over low heat and cook for 3 minutes, or until well combined and heated through. Add the ground sesame seeds, remove from the heat and set aside.
  3. Bring a saucepan of water to the boil and blanch the beans for 4 minutes, or until tender but still crunchy. Refresh immediately under cold running water, then drain again.
  4. Toss the beans with the sesame dressing and serve warm as a side dish, or allow to cool to room temperature and eat later as a salad.
