This is a mouth-puckering salad that refreshes and arouses the taste buds. I’ve balanced the bitterness of the salad leaves with sweet oranges and balsamic vinegar. Eat it with a hearty Sunday lunch.

Ingredients

Quantity Ingredient
1 head witlof
1 head radicchio
200g rocket
1/2 red onion, finely sliced
1/2 fennel bulb, finely sliced
2 oranges, segmented
10 pitted green olives, sliced

Orange dressing

Quantity Ingredient
3 tablespoons fresh orange juice
3 tablespoons extra virgin olive oil
1 teaspoon balsamic vinegar
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

Method

  1. Separate the lettuce and radicchio leaves and immerse in a large bowl of water. Wash each leaf individually, then dry in a salad spinner. Cut the salad leaves into bite-sized pieces and place in a salad bowl. Add the rocket, onion, fennel, orange segments and sliced olives.
  2. To make the dressing, whisk together the ingredients in a bowl. Just before serving, pour the dressing over the greens and toss gently to combine.
