These radish pickles look great on a plate and are sweet, salty and sour to taste. Refrigerate for up to three days.

Ingredients

Quantity Ingredient
250g red radishes, stems removed
1 tablespoon umeboshi vinegar
1 teaspoon orange zest

Method

  1. Bring the radishes, vinegar and 3 tablespoons water to the boil in a saucepan over high heat. Cover, reduce the heat and simmer for 10 minutes, or until the radishes are soft. Reduce the liquid enough to just glaze the radishes. Serve sprinkled with the orange zest.
