Sweet corn and minted green pea soup

This is a soup that simply celebrates the flavours of late summer with deliciously sweet corn and fresh garden peas. It’s a creamy, rich and tasty treat.

Ingredients

Quantity Ingredient
1 teaspoon dark roasted sesame oil
1 onion, diced
sea salt
2 corn cobs, kernels removed
2 celery stalks, diced
4 cups * vegetable stock [rid:9273]
or 4 cups water
300g shelled fresh green peas
2 tablespoons sweet white miso
1 tablespoon finely sliced mint leaves

Method

  1. Heat the sesame oil in a saucepan over medium heat and sauté the onion with a pinch of sea salt for 3 minutes, or until softened. Add the corn kernels and celery and top with the stock or water. Cover the pan and simmer for 7 minutes. Add the peas and cook for a further 5 minutes.
  2. Put the miso in a bowl, pour in some broth and mix until the miso dissolves. Add the diluted miso to the pan and simmer for 3 minutes. Serve topped with mint.
