Snacks on cocktail sticks have a certain retro whimsy. These starters follow that lead, but with a modern twist; no cheddar or pineapple chunks here, thanks. Instead you’ll find that tomato with mint and sheep’s milk cheese form a cracking combination – sweet and acidic, fresh and milky all at once. Halloumi can occasionally have the texture of a kitchen sponge, particularly when it’s overcooked. The key is to grill it over a blazing surface just long enough for the outside to caramelise and the interior to relax. Check if your surface is hot enough by placing half a lemon, cut side down, on it. If it sizzles on contact, you’re right to start cooking. Once the skewers are done, you’ll have a ready-made dressing in the blistered lemons: winner.

16 cherry tomatoes, halved
3 tablespoons olive oil
A pinch sea salt
1 lemon, halved
180g halloumi cheese, cut horizontally into 1-cm thick slices
16 fresh mint leaves

Method

  1. Preheat the oven to 180˚C.
  2. Place half of the tomatoes, cut side up, in a baking dish and drizzle with 1 tablespoon of the olive oil, and the salt. Bake them in the preheated oven for 20 minutes, or until the tops have started to blister and soften.
  3. Five minutes before the tomatoes are ready, heat the remaining olive oil in a non-stick frying pan over medium heat. Test when the pan is hot enough by placing the 2 lemon halves, cut side down, in the pan. When they sizzle, it’s time to add the halloumi slices. Leave the lemon where it is and add the halloumi. Fry it for 2–3 minutes on each side until it has developed a mottled brown tan. The lemon should also have caramelised, creating an instant dressing for the halloumi.
  4. Drain the halloumi on kitchen paper, then cut each slice into 8 pieces the size of a postage stamp. Skewer onto a cocktail stick a piece of halloumi, a roasted tomato half, a mint leaf and a fresh tomato half. Serve them hot, with the blistered lemon halves on the side to squeeze over.
