Brussels sprouts boiled to death is my idea of hell, so I just sauté them with chilli to make this warm salad with clementines. You need some vegetables during the festive season to digest all that wonderful, but heavy, Christmas food!

Ingredients

Quantity Ingredient
1kg brussels sprouts
6 clementines
1 teaspoon salted butter
1 red chilli, finely chopped
salt
freshly ground black pepper

Method

  1. Remove the outer leaves from the Brussels sprouts and cut off the bases. Cut them into very thin slices. Rinse and leave to drain in a colander.
  2. Peel the clementines, cut them into slices and cut the slices in half. Melt the butter in a saucepan and sauté the sprouts for two minutes. Add the chilli and clementines and sauté for further two minutes. Remove from the heat, season and serve.
