Kale salad with pomegranate

One of the newer additions to our Christmas Eve dinner. The raw green taste of the kale amid all the sweet, fatty things is perfect.

Ingredients

Quantity Ingredient

For the salad

Quantity Ingredient
400g kale leaves
3 pomegranates

For the dressing

Quantity Ingredient
1 lime, juiced
3 tablespoons olive oil
salt
freshly ground pepper

Method

  1. Rinse the kale in cold water, then squeeze to remove the water. Shred the leaves finely. Cut the pomegranates in half and release the kernels and juice, discarding any white, pithy membrane. Mix the kale into the pomegranate kernels and juice. Mix the ingredients for the dressing and toss through the salad, seasoning to taste.
