I often serve this as an alternative to hot vegetable dishes; it seems more modern somehow, and is wonderfully crunchy.

Ingredients

For the salad

Quantity Ingredient
1 small red cabbage
4 pears
150g walnuts

For the dressing

Quantity Ingredient
2 tablespoons walnut oil
3 tablespoons cider vinegar
salt
freshly ground pepper

Method

  1. Remove and discard the core and the thick central ribs from the cabbage and finely shred the leaves. Cut the pears into wedges and mix with the cabbage. Roughly chop the walnuts and mix with the salad.
  2. Whisk together all the ingredients for the dressing and mix it with the salad just before serving. Do not let the salad sit, because red cabbage goes soft very quickly.
