This is my father’s recipe, from our summer holidays on his sailing boat. Cooking in one pot is really suited to a small kitchen with only one burner, and this is an easy and lovely way to cook garfish, which is a speciality in Scandinavia and in season in spring and then again in early autumn. It is very popular, as can be seen from restaurants’ menus during these months.

Ingredients

Quantity Ingredient
600g new potatoes, washed and sliced
2 spring onions, sliced
10 small carrots, cut lengthways if large
10 asparagus spears
200g shelled peas
6 garfish fillets
A large bunch dill
300ml white wine
200ml double cream
sea salt
freshly ground black pepper

Method

  1. Place the sliced potatoes in the bottom of a large saucepan, then layer the spring onions (scallions), carrots and asparagus on top. Add the garfish, sprinkle with salt and pepper, and top with the peas and dill.
  2. Pour over the wine and cream. Bring to the boil then let it simmer, covered, over a low heat for 15–20 minutes. Serve right away, from the saucepan. I recommend accompanying it with a nice a glass of cold white wine.
