Berries are a Nordic treasure: the range is amazing, and delicious berries are the joy of summer. They grow slowly in the cool climate and owe their especially good flavour to having so much daylight but not the strong sun that would make them grow too big. So less really is more…

Ingredients

Quantity Ingredient
1 vanilla pod
500g unripe gooseberries, topped and tailed
250g caster sugar

Method

  1. Split the vanilla pod (bean) in half lengthways, then put it in a pan with the gooseberries and sugar. Bring to the boil, then reduce the heat and simmer for 20 minutes.
  2. Pour the hot compote into warmed, sterilized preserving jars and, when cooled down, seal tightly and store in the refrigerator for up to 3 months.
