Ingredients

1kg gooseberries, topped and tailed
500g light cane sugar
1-2 vanilla pods
2 unwaxed lemons, finely zested

Method

  1. Preheat the oven to 150°C.
  2. Place the gooseberries in an ovenproof dish and sprinkle with the sugar. Split the vanilla pods (beans) in half lengthways, then add them to the dish with the lemon zest and transfer to the oven.
  3. Bake the gooseberries for 45–60 minutes, stirring every 15 minutes, until they have turned a rose-pink colour.
