Berries are a Nordic treasure: the range is amazing, and delicious berries are the joy of summer. They grow slowly in the cool climate and owe their especially good flavour to having so much daylight but not the strong sun that would make them grow too big. So less really is more…

Ingredients

Quantity Ingredient
300g strawberries
300g rhubarb, thickly sliced
200g caster sugar

Method

  1. Put the strawberries and rhubarb into a saucepan and bring to the boil gently. Boil, in the juice they release, for 10 minutes, then add the sugar and let it simmer for 10 minutes.
  2. Pour into warmed, sterilized jars and seal tightly. This will keep for months stored in a cold place.
