Butter cookies are the best in the world, and these swirl cookies have the added taste of chocolate. Be sure to make enough to last the entire Christmas holidays!

Ingredients

Quantity Ingredient
300g butter
150g icing sugar
1 egg
400g plain wheat flour
75g cocoa powder
1 egg, beaten

Method

  1. Cream the butter and icing sugar together with an electric mixer until the mixture is pale and fluffy. Add the egg and beat well, then stir in the flour. Divide the dough in half and add the cocoa to one portion, working it until fully combined.
  2. Preheat the oven to 200°C. Roll both pieces of dough out into rectangles. Brush the pale dough with some of the beaten egg then cover it with the chocolate dough. Starting from the longest side, roll up the dough to form a cylinder with a swirl pattern inside.
  3. Cut the cylinder into thin slices and put them on a baking tray lined with baking paper. Glaze with the rest of the egg and bake for 8 minutes or until golden brown, then remove from the oven and cool on a wire rack.
