Mackerel is perfect for everyday food in summer as it is inexpensive, healthy and easy to prepare. When you fry mackerel in butter, the skin becomes crisp and tastes delicious. Serve it with a fresh tomato salad and tiny baked potatoes. The dressing here has a sour taste that goes well with the fatty mackerel – if you prefer it sweeter, add some honey.

Ingredients

4 small fresh mackerel
salt
pepper
30g butter
lemon wedges, to serve

Potatoes

Quantity Ingredient
700g small new potatoes
1 lemon, sliced
4 tablespoons olive oil

Salad

Quantity Ingredient
4 ripe tomatoes, cut into wedges, then halved
1 cucumber, diced
1 small white salad onion, very finely sliced
2 tablespoons white wine vinegar
1 teaspoon dijon mustard
A pinch sugar
4 tablespoons olive oil

Method

  1. Preheat the oven to 200°C. Put the potatoes in an ovenproof dish with the sliced lemon. Drizzle with the olive oil, sprinkle with salt and freshly ground pepper and mix well. Bake in the oven for 45 minutes.
  2. Meanwhile, prepare the salad. Put the tomatoes, cucumber and onion in a bowl. Mix together the vinegar, mustard, sugar and olive oil and fold the dressing into the salad.
  3. Season the mackerel with salt and pepper. Heat the butter in a large frying pan and fry the mackerel for about 5 minutes on each side. Serve the mackerel immediately with the tomato salad, the baked potatoes, and fresh lemon to squeeze over the fish.
