Rygeost is a very special smoked, soft cheese produced in Denmark. It has the taste of summer sun and is ideal for a light lunch with cold beer.

Ingredients

Quantity Ingredient
200g Mayonnaise
200g radishes, coarsely chopped
1/2 cucumber, deseeded and cubed
4 tablespoons chives, finely chopped
salt
pepper
700g rygeost
or 700g smoked ricotta

To serve

Quantity Ingredient
rye bread
whole chives
radishes, chopped

Method

  1. Mix the rygeost and mayonnaise together in a bowl, beating until there are no lumps remaining.
  2. Add the radishes, cucumber and chives and stir to mix. Season to taste with salt and freshly ground pepper, then serve on rye bread, garnished with the whole chives and chopped radishes.
