Potato salad with fresh herbs and spring onions

Ingredients

Quantity Ingredient
2kg baby new potatoes
50ml white wine vinegar
5 spring onions, cut into 5 mm pieces
100g flat-leafed parsley, chopped
100g chervil, chopped
100g chives, finely chopped
2 tablespoons mint, finely chopped
50ml olive oil
salt
pepper

Method

  1. Scrub the potatoes and boil in a large pan of salted water until soft but still firm, then drain and put in a large bowl.
  2. Add the white wine vinegar and spring onions to the bowl, mix gently and leave to cool.
  3. Just before serving, add the herbs, olive oil, and salt and freshly ground pepper to taste.
