Swedish cheese tart with ham

Ham is traditional in Scandinavia, just as it is in Spain and Italy, but we are not as famous for it as they are. However, our hams are also of excellent quality and their salty taste goes well with this cheese tart. Skagen ham from Denmark is lightly smoked.

Ingredients

Quantity Ingredient
250g puff pastry
butter, for greasing
4 eggs
150ml whole milk
300g strong hard cheese, grated, such as Västerbotten or Cheddar
1/2 teaspoon salt
pepper

To serve

Quantity Ingredient
12 thin slices skagen ham
or 12 thin slices parma ham
or 12 thin slices serrano ham
green salad

Method

  1. Preheat the oven to 180°C. Roll out the pasty on a floured work surface until thin then use it to line a buttered 20 cm-diameter tart tin (preferably one with a perforated base to help make the pastry crunchy).
  2. In a bowl, beat the eggs and milk and stir in the cheese, salt and lots of freshly ground pepper. Pour the mixture into the tart case.
  3. Bake for 45 minutes, then serve the tart warm with the ham and a crisp green salad.
