Chanterelle, bacon and plum salad with blue cheese

The chanterelle season starts in late August and, if it is a good year, goes on until October. The best ones are collected in the woods. In Denmark we have professional pickers who, after they have been to the woods, will sell the chanterelles directly to stores and restaurants. Chanterelles are ruined if you wash them in water; brushing them clean is a lot of work, but worth it.

Ingredients

Quantity Ingredient
200g organic bacon, cubed
200g chanterelles
2 tablespoons olive oil
salt
pepper
10 plums, stoned and cut into wedges, red or green
200g mixed lettuce leaves
135g blue cheese, crumbled

Dressing

Quantity Ingredient
4 tablespoons balsamic vinegar
1/2 teaspoon caster sugar
2 tablespoons olive oil

Method

  1. Cook the bacon until golden in a frying pan. Leave to drain on a piece of paper towel.
  2. Use a dry brush to clean the chanterelles, then fry them for 5 minutes in 1 tablespoon of the olive oil. Season with salt and freshly ground pepper and leave to cool in the frying pan.
  3. Sauté the plums for a minute in the remaining oil.
  4. To make the dressing, mix the balsamic vinegar and sugar together in a small bowl, then whisk in the olive oil until the mixture has emulsified (this will take a while as there is more vinegar than oil).
  5. Just before serving, combine the bacon, mushrooms, plums and lettuce. Pour the dressing over and toss gently. Add the blue cheese but do not toss the salad any more because it easily turns mushy.
