When I am in the Philippines, I make the most of it. This includes a creamy ice-cold mango shake every day. My partner, Steve, shows no restraint; after the daily shake at my family’s place, he orders at least another two through the day.

If you could only try one Filipino drink, this should be it. Sweetness varies between mango batch and variety, particularly overseas, so add a touch more sugar if needed.

Ingredients

Quantity Ingredient
1kg ripe mangoes, stones removed, peeled
5 cups ice cubes
190ml evaporated milk
55g caster sugar, plus extra to taste

Method

  1. Place all of the ingredients in a blender and blend until nearly smooth (there will still be small grains of ice). Add extra sugar to taste, if desired. Divide among four tall glasses and serve immediately.

Where does it come from?

  • Mango is the Philippines’ national fruit and the people pride themselves on having some of the world’s best. Select regions, including Zambales, Guimaras and Cebu, are well-known producers, but the sweet, sun-kissed fruit is ubiquitous around the country.
