Method

  1. After making sugar syrup, carefully pour it onto an oiled marble slab or silicone mat.
  2. As the syrup is runny at this stage, work quickly, using a palette knife or metal scraper, and gently push or scrape the outer edges of the sugar inwards to the middle. Keep working the syrup by doing this until the syrup starts to cool down and thicken.
  3. Add flavouring or colouring if desired and continue to push the syrup back and forth to ensure it is mixed in well.
  4. Once the syrup is cool enough to handle, put on some latex gloves and lightly oil them. Start pulling the now thickened syrup, bringing the ends together.
  5. Pull and bring the ends back together as this aerates the syrup and makes it chewy. Repeat this until it is difficult to pull any more.
  6. The taffy is now changed to a lighter shade in colour and is still pliable.
