It is hard to imagine something being refreshing and utterly unctuous at the same time, but this dairy-free spread delivers on both those fronts. Serve dollops of it with salads or roasted vegetables, or mix with hummus for a fantastic dip.

Ingredients

Quantity Ingredient
140g shelled,unroasted macadamia nuts, soaked in cold water for a few hours then drained
1/2-1 tablespoons lemon, Juiced
pinch salt
1/2 tablespoon nutritional yeast flakes
1 teaspoon maple syrup
1 tablespoon olive oil
2-4 tablespoons water, as needed

Method

  1. In the small bowl of a food processor, or using a stick blender, pulse together all the ingredients until the spread has a relatively smooth consistency, with a few crunchy bits.
