Used in the Mexican Rice and Black Bean Salad, this recipe makes much more than you need, but you will be glad for it, as it is the most moreish snack you could ever wish for.

Ingredients

Quantity Ingredient
500g mixed shelled, unroasted nuts, Brazils, pecans, walnuts, almonds, hazelnuts, cashews)
1 egg white, lightly whisked
1/2-1 teaspoons nely †aked sea salt
2 teaspoons ground cumin
1 teaspoon garlic powder
1 heaped teaspoon ground dried oregano
2 teaspoons sweet paprika
2 teaspoons dried chipotle chilli powder

Method

  1. Preheat the oven to 160°C and line a baking tray with baking parchment.
  2. Stir the nuts into the egg white to coat, then add the spices and mix well. Spread out in a single layer on the lined baking tray and bake in the oven for 30 minutes or until crisp and crunchy, giving them a stir halfway through.
