My mother is the true hero of this book, as many of the dishes I have shared with you are ones that she has passed on to me (and indeed her mother passed down to her), including this recipe. This creamy side dish is all about the taste of the carrots, so you need to use the best quality carrots you can find – the young, thin ones with the green tops have the most flavour.

Ingredients

Quantity Ingredient
300-350g carrots, peeled and cut into dice
150g peas, defrosted if frozen
25g salted butter
1 tablespoon plain flour
50ml milk
salt, to taste
white pepper, to taste

Method

  1. Put the diced carrots in a pan and pour over just enough boiling water to cover by about 1 cm. Place over a medium heat and cook until almost soft. Add the peas and simmer together for about 5 minutes.
  2. Meanwhile, melt the butter in a pan over a medium heat. Add the flour and cook, stirring, for a couple of minutes. Gradually add the milk, stirring all the time to make a thick, smooth sauce.
  3. Add this zasmażka sauce to the pan of vegetables. Stir it in thoroughly, season to taste and allow it to heat through and thicken for about 2 minutes before serving.
