This is excellent with summery barbecue food, especially pork. You can make it spicy by adding a couple of halved, seeded and chopped chillies, or give it even more of an American accent by adding roasted corn kernels.

Ingredients

75g wild rice
75g camargue red rice
150g brown long-grain rice
60ml cider vinegar
1 teaspoon dijon mustard
90ml peanut oil
90ml olive oil
1 chunk stem ginger, finely chopped, plus 1½ teaspoons of syrup from the jar
1 tablespoon maple syrup
salt and freshly ground black pepper
25g toasted pecans, roughly chopped

2 garlic cloves, crushed
300g green beans, trimmed and cut in half
15g roughly chopped flat-leaf parsley
4 spring onions, chopped

Method

  1. Cook the rice in water. The brown rice will have to be cooked on its own but the wild and Camargue rice can be cooked together. Wild rice never really softens but stays firm and nutty and should be ready in 25 minutes. The brown rice will take around 40 minutes – it stays nutty as well, but less so than the wild rice.
  2. While the rice is cooking, whisk together the garlic, vinegar, mustard, peanut oil, olive oil, ginger, ginger syrup, maple syrup and salt and pepper. It looks like a lot of dressing but rice salads really soak it up. Set aside.
  3. Cook the beans in boiling salted water until al dente, then plunge them into cold water to preserve their green colour. Drain. When the rice is cooked, drain and mix with the beans, pecans, parsley and spring onions. Toss together with some of the dressing – keep some back to add later as the rice cools. Taste for seasoning. Serve warm or at room temperature.
