A good chocolate mousse is a joy to behold—and to eat, of course. This chocolate mousse tastes delicious, is incredibly simple to make, and happily adapts to having fragrant and tangy passionfruit added to it. Use the best quality chocolate you can find.

Ingredients

Quantity Ingredient
200g chopped good-quality dark chocolate
3 eggs, separated
250ml whipping cream
6 passionfruit, pulp strained to remove the seeds, plus extra passionfruit pulp to top

Method

  1. Melt the chocolate by placing it in a bowl over a saucepan of simmering water or in a microwave on low for 1–2 minutes. Leave to cool slightly.
  2. Whisk the egg whites in a bowl until soft peaks form. In a separate bowl, whip the cream until thickened.
  3. Gently whisk the egg yolks into the melted chocolate. Add a spoonful of cream and a spoonful of egg white and fold them in; this will allow the mixture to stay aerated. Gently fold in the remaining egg whites and cream, plus the strained passionfruit pulp.
  4. Spoon into a serving dish or individual bowls or glasses and allow to set for 2–3 hours or overnight. Serve the mousse with a little passionfruit pulp on top.
