Method

  1. Slice 2 boneless, skinless chicken breasts into thin strips. Prepare marinade by mixing together 3 tablespoons soy sauce, 3 tablespoons Chinese rice wine, 2 teaspoons sesame oil, 2 teaspoons caster sugar and 2 tablespoons grated ginger. Pour over the chicken and allow to marinate for 20 minutes. Remove the chicken from the marinade, reserving the liquid. Heat a wok until hot, add a splash of oil and stir-fry the chicken strips for 2–3 minutes, until browned. Add 125 ml chicken stock and 1–2 tablespoons of the reserved marinade. Add 200 g chopped broccolini and cook for a further 3–4 minutes, stirring often. Serve with steamed rice.
