Mexican corn fritters with guacamole

These spiced fritters make the perfect partner to a smooth, creamy guacamole laced with spring onion and herbs and are good served at any time of day.

Ingredients

Quantity Ingredient
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon smoked paprika
2 teaspoons chopped chipotle in adobo sauce
75g self-raising flour
150g polenta
1/2 teaspoon salt
1 teaspoon baking powder
1 egg
250ml milk
2 corn cobs
1-2 tablespoons oil
rocket, to serve

Guacamole

Quantity Ingredient
1 ripe avocado
2 tablespoons lime juice
2 tablespoons chopped coriander leaves
dash tabasco sauce
1 tomato, finely diced
2 spring onions, thinly sliced
salt
freshly ground black pepper

Method

  1. In a large bowl, combine the cumin, ground coriander, smoked paprika, chipotle, flour, polenta, salt, baking powder, egg and milk. Mix until smooth. Allow to stand for 10 minutes; if necessary, add more liquid.
  2. Meanwhile, make the guacamole. Cut the avocado in half by using a sharp knife to cut around the stone, then twist to separate. Remove the stone carefully using the heel of the knife and discard. Holding each avocado half in the palm of your hand, use a small knife to roughly crisscross the flesh and scoop into a bowl. Add the lime juice, coriander, Tabasco, tomato and spring onion. Season with salt and freshly ground black pepper. Mix to combine, making it as chunky or as smooth as you prefer.
  3. Remove the kernels from the corn cobs and add to the batter.
  4. Heat the oil in a heavy-based frying pan over medium heat. Drop spoonfuls of the batter into the pan and cook on one side until golden brown with bubbles forming on top. Turn the fritters over and cook the other side until golden brown. Repeat until the mixture is used up, adding more oil as needed and keeping cooked fritters warm in the oven.
  5. To serve, top the fritters with rocket and guacamole and serve while still warm.
