Method

  1. Put 4 salmon fillets in a shallow dish. Mix together 2 tablespoons soy sauce, 1 tablespoon grated ginger, 1 seeded and finely chopped small red chilli, 1 tablespoon oil and freshly ground black pepper. Pour the marinade over the fish and leave, covered, in the refrigerator for at least 20 minutes, but no longer than 4 hours. Remove the fish from the marinade. Cook the salmon on a medium–hot barbecue for 4 minutes on each side. Make a simple Asian-style salad by mixing 200 g baby bok choy with a handful of bean sprouts, coriander leaves and 4 sliced spring onions. Dress lightly with a combination of soy sauce and sesame oil.
