Method

  1. This is a perfect winter dessert that can be made with other citrus fruits: try using limes, oranges or tangelos. Preheat the oven to 180°C. Butter a 1 litre pudding bowl and sprinkle with caster sugar. Cream 75 g softened butter, 345 g caster sugar and the zest of 1 lemon. Add 3 egg yolks, reserving the whites, and mix well. Add 125 ml lemon juice, 250 ml milk and 100 g self-raising flour and combine. Beat the egg whites until stiff and fold through the batter. Spoon the mixture into the pudding bowl and put in a deep baking dish. Pour enough hot water into the dish to come halfway up the bowl. Bake for 45 minutes, or until puffed and golden brown.
